Well look at that, I managed to get back into my WordPress account. WordPress and I have a love hate relationship as they like to quite often tell me my password is incorrect and make me reset it. They love striking my last nerve:-) But here I am, I won the battle of the password! Today is a major major coffee day (Ok fine, anyone who knows me knows everyday is a major coffee day) as yesterday was a super busy day and I am worn to a frazzle! I really need to get over to eBay and work on my store but I have so many recipes waiting to be posted so I thought I will start with this one and it’s one less waiting. This recipe is really yummy, this idea just came to me recently and its very easy!
Ingredients:
5 ripe avocados
1 lb ground Italian sausage
1 large red pepper
1 large green pepper
1 large yellow onion
Olive oil (for sauteing the vegetables)
Italian seasoning
ground black pepper to taste
white sauce or Ranch dressing (just to drizzle on top)
Directions:
Brown the Italian sausage in a frying pan until cooked through, and at the same time saute the peppers and onion in another frying pan in olive oil until done. Drain grease and leave on low heat. When the vegetables are done also leave on low heat while you prep the avocados. Slice the avocados lengthwise, remove pit and peel of skin. Carve a bigger whole in the avocado, bigger than what the pit leaves so you can fill it. Fill each avocado with sausage then then top with the pepper mix. Drizzle with the white sauce, add some pepper and enjoy! They look really pretty and they are tasty!
Now I live in BBQ country, if you are not familiar with white sauce or don’t like it you can use ranch or create your own sauce to drizzle on these. The white sauce has a nice tang from the vinegar in it and adds a nice touch. I was looking around trying to think of what to put on these and had a new bottle of Big Bob Gibson’s white sauce which we LOVE so I used that:-) If you are looking for an easy dinner give these a try!
