Are there other mothers out there who feel like they need a vacation after their kids school vacation ends?! I know I can’t be alone! We have had a fun busy week, and I thought since we were staying home and not going away that it would be an easy relaxing week, silly me! But they are only kids once and they are awesome kids! Next week I must take my eBay store off the back burner and get back to routine. I am very much a creature of habit so weeks like this tend to throw my personality type for a loop:-) I have managed to find to make some yummy things this week, I haven’t blogged them for the most part due to that time thing but I will start working on that! We did catch a few really good movies, in fact we just got home from watching the new OZ movie with friends! But anyways, on to food:-)
I saw this recipe on Pinterest pinned by a lady named Pam Gatton and had to repin and of course make this! It was an easy and very yummy dinner, if you are looking for something simple to make for dinner, give these Philly Cheese steak Stuffed Peppers a try!
Ingredients:
5 medium Green Bell Peppers
1 package of Steak-Um Meat (not sure that is what the original recipe used, but that’s what I used)
1 package of sliced mushrooms
3 onions, sliced
10 slices provolone cheese
parsley for topping
Black pepper for topping
Italian seasoning for the onion/mushroom mix
Directions:
Prepare Meat as box indicates and set aside. Preheat the oven to 350. Heat olive oil in frying pan then saute the onions and mushrooms in olive olive oil until browned/carmelized. Mix in Italian seasoning per taste. While these are sauteing wash peppers then slice them lengthwise and remove seeds. Set aside in a baking dish. When the onion/mushrooms are done set aside. Place desired meat in each pepper. Add onion and peppers then top each with a slice of provolone cheese. Bake at 350 for about 10 minutes or until cheese is melted. Remove from over, sprinkle with Parsley and ground pepper and serve! I served ours with a side of garlic bread which was a nice match:-) Enjoy!
