Homemade Buttermilk Pancakes with Apple and Brown Sugar topping

Can I just say how wonderful it is to not have to wake up and pack lunches, and wake over tired monsterous children who just want to sleep and drive to two different schools (which I do in my pajamas by the way)! It is simply LOVELY to just wake up and BE!  Be what? Be lazy, be productive, be anything we want to be! Of course my internal clock had me up at 6:30, but that is fine, I rather enjoy my time alone to drink my coffee and take in the peace of the morning and plot out the days plan, this is the reason I get up at 5:30 every school morning. I just love mornings, time to just relax and be thankful and reflect. After that first cup of coffee kicks in, my battery is pretty much charged up for the day and I rarely stop, I rather enjoy my undiagnosed ADHD, the only part I wish I could change was the finishing a task part, there’s always a million almost done or I meant to get done projects around our house! The one thing that never goes unfinished is anything to do with food! That always gets done!

I decided since I have the kids home on vacation I would make pancakes. They were awesome, yet even that delicious smell has yet to wake the three teenage boys(only one is mine!), I am actually glad to have the house smelling like yummy pancakes, it drowns out the smell that permeates from the teenage room on almost any given day;-) My daughter is thankful for that as well! Also, I thought I would surprise my husband with a nice breakfast as he came in from working the overnight shift. Nothing like heading to bead with a nice belly full of warm pancakes! Of course I can never, hardly ever unless I’m sick or severely exhausted, make anything plain and boring. So I created a simple apple and brown sugar topping to go on top. And as we joked, it sure was a simple heavenly eat! Here is my recipe!

Buttermillk pancake ingredients:

3 cups of all purpose flour

3 tbsp sugar

2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

3 cups low fat buttermilk

3/4 cups skim milk

3 eggs

4 tbsp melted butter

1/2 tsp cinnamon

 

*See the topping mixture below. Make this first and heat this on 170 degree heat while you make the pancakes:-)

In a large mixing bowl mix together flour, sugar, baking soda, baking powder and salt. In another bowl whisk together buttermilk, milk, eggs, melted butter and cinnamon. Oil your griddle and heat. Mix the wet and dry ingredients and make the pancakes.

 

Apple topping ingredients:

3 large apples, peeled and sliced into semi thick slices

4 tbsp brown sugar

2 tbsp melted butter

1 tsp cinnamon

Place sliced apples into medium sized mixing bowl. Pour melted butter over them then add the brown sugar and cinnamon and mix well. Bake at low heat, 170, the whole time you make the pancakes, it just softens them enough and makes the flavors really seep into the apples!

  1. See, now you’re making me look bad 😉 My husband’s Matt, the newer (and FINALLY working down here full time!) ANII inspector… Glad you’re getting some (slightly) relaxed time in for spring break–our oldest starts kindergarten this fall, so I’m always crazy-mommy–and they help the ADD not one bit 🙂

    • when Bill told me who your husband is I laughed because I always hear him talk about “the ANII guy”, he really likes working with him! But to hear him say Matt (which is also our sons name:-)) sounded funny because he always refers to him as ANII guy, hahaha! You don’t look bad! With your oldest going into kindergarten I am sure you have your hands full!!

      • Yeah… I don’t think we’ve had a “normal” (to me, anyway) life since before my daughter was born–and she’s 3. We’re always NOT together, you know? But even with crazy-outage schedule, it’s nice to see him every day. I get really lazy about my cooking, though–the kids aren’t picky, and why make that stunning five-course meal for them if they’d be just as happy with mac&cheese? So I need to step up my game, or he’ll get jealous of Bill! 😉 I told him I’m going to start coming to work with him, he gets all the good treats…

      • Tiffany, when my kids were your kids ages I rarely had time to make much for (and our kids are still sooo picky), it’s hard when they are younger, enjoy playing with them and keeping up with them! Mine are still so busy but it’s a whole different busy at 10 and 13. When the outage is over we should all get together!!!! I’d love to get to know you!
