Ok, I have another simple as could be but delicious recipe to share! This is a great standby for a busy night since it doesn’t require a whole lot of work! I made this the other night and we just finished off the leftovers. This dish, like a lot of casserole and pasta dishes, is almost better leftover as the flavors all settle in. Tell me how anyone doesn’t like leftovers?! I’m just going to ramble this post off quickly since I need to head to my daughters violin lesson soon so here goes!
1 lb ground turkey (you could use ground beef)
1 box pasta (I used Barilla plus elbows)
2 jars of sauce (I used Kroger Traditional)
1 can of cream of mushroom soup (I use heart healthy)
1 medium onion diced
2 garlic cloves minced
oregano to taste
ground black pepper to taste
sea salt to taste
Brown up the ground turkey with the onion until meat is not longer pick and is fully cooked. Drain grease, add minced garlic mixing well and set aside. In a medium size sauce pan add the sauce, cream of mushroom soup, meat mixture, oregano, salt and pepper. Cover and simmer on medium-low, stirring occasionally. At the same time boil the water for the pasta and cook as directed on the box. When pasta is al dente, drain and put back into the large pan. Add the sauce/meat mixture and mix well. You can top it with cheese, we put a little Parmesan on ours. You might think the cream of mushroom soup is an odd thing to add to it but it really adds a great flavor and gives it a slightly creamy texture so don’t be afraid! You could always use tomato soup. This is so very simple but so good!
