Good morning! I hope everyone is having a beautiful Friday morning! It’s amazing how the kids head out the door so happy on Friday mornings, it sure makes momma’s life easier:-) Yesterday one of the things I made was a Butterscotch chip banana bread. I used my traditional banana bread recipe, added the chips and sprinkled the top with brown sugar and more chips before baking and it turned out delicious, it was a good combination and was a big hit with the family. If you have time this weekend and some bananas kicking around you should give this a try!
Ingredients:
1 cup of sugar
1/2 cup crisco
2 eggs
4 ripe bananas
2 cups all purpose flour
1 tsp baking soda
1 tsp vanilla
1/2 tsp salt
1 bag butterscotch chips 1/2 to 3/4 cup brown sugar (I didn’t measure, whats new huh!)
Directions:
Beat the sugar and crisco with an electric mixer. Add eggs, baking soda, salt and vanilla and beat until creamy. Add bananas and flour and beat again until creamy. Stir in 3/4 cups of the butterscotch chips then pour mixture into greased loaf pan. Sprinkle with brown sugar and top with the remaining chips and bake at 350 for about 60-70 minutes or until done! See, easy!
This bread has it all, butterscotch chips were a great addition!
