Good Evening:-) I just got home from a nice family walk, I just love this time of year, it’s so refreshing and beautiful! I have several different posts in the works but wanted to start with this one because it’s fun, easy, and so Southernly delicious! I know Southernly isn’t really a word but I like it:-) This is a great Crock Pot meal so that also makes it great for a night that is super busy.
Ingredients:
1 large pork loin
1 jar of BBQ Sauce ( I used Sweet Baby Rays Raspberry Chipolte because it still hold the #1 rank in our house for the time being, so good!)
2 heaping tbsp brown sugar
2 tsp garlic powder
1 can Baked Beans (I used Bush’s Maple flavored)
1 package of cole slaw (in salad section of produce)
1/2 cup light mayonnaise
1/4 cup Miracle Whip
3 tbsp apple cider vinegar
1 tsp ground red pepper
2 tbsp (or more) dill
dill pickle spears
Crock pot the pork loin on low heat for 8 hours with the jar of BBQ sauce, brown sugar, and garlic powder. You will pull/shred the pork the last 20 minutes of cooking.
I make the cole slaw up in the morning so it can sit all day and soak up the flavors. Rinse cole slaw and place in a large bowl. In a medium size mixing bowl mix the mayonnaise, miracle whip, apple cider vinegar, ground red pepper, and dill. You can alter the amount of ingredients for your taste. When the mayo mix is ready mix it in with the slaw well, cover and refrigerate.
The last 20 mins after you shred the pork, make the beans in a sauce pan as directed on can. Or you could be ambitious and make your own beans, but that would require time:-) When everything is done, the fun begins. Find your sundae cups. First place a good amount of pulled pork in the cup, then add beans, then the slaw! Add a dill pickle and you have a great delicious meal. This is not for people who don’t like their food to touch obviously! Enjoy!

Haha, thanks! I actually got the idea from our favorite BBQ joint here, they put it all in a plastic cup so we recreated our own version! And yeah, I love mayo and miracle whip together, gotta have that tang of the miracle whip mixed in! Thanks for following along my blog! Oh my, we are so going to make this! Since we pretty much only eat meat we’ve gathered ourselves we will adapt our “pulled caribou sandwich” recipe and use that as the meat! Cool concept!!
