Honey Mustard Chicken Pizza and BBQ Chicken Pizza

SONY DSC SONY DSCI just realized I haven’t made a post in a while, I’ve been too busy with my eBay store and enjoying the nice weather! We have a whole front and back yard to landscape, it’s so awesome have a yard that no one has ever owned that we can start from scratch and create! We put in some crepe myrtles, some rose bushes, flowers for our mulch beds to add some fun color and a Japanese Maple which has always been on my husbands wish list, now he’s got it! There is more to come but I can only envision a few things at a time:-) So my blog has been on the back burner, of course cooking and eating as always has not, I just haven’t posted. I thought since I hadn’t posted I would just post what we ate tonight, nothing terribly exciting but is was simple and it was really good and even better, it was pizza! I made a Honey Mustard chicken pizza and a Raspberry Chipolte BBQ Chicken Pizza. You will notice one pizza is rectangular and one is round and that is simply because I have one round and one rectangular stone so that’s how it has to happen! I keep saying I need to buy another round stone and just never do, someday! Since I use my stone wear for everything I should probably really think about getting another one sooner than later:-)

Pre-heat the oven to 400 degrees.

Ingredients for Honey Mustard Pizza:

1 tube of refrigerated Pillsbury Pizza dough

1/2 package of Perdue grilled chicken shortcuts

1/2 small onion, sliced

Yellow Mustard (I didn’t measure, oops!)

Honey (I didn’t measure again, oops, hehe!)

ground cumin (you know, I didn’t measure)

garlic powder (you know the story…)

Cheddar Cheese (about 1 cup)

Parsley for topping

Crushed Red Pepper for topping

Roll out dough on pizza stone. In a small bowl mix Mustard (about 1/4 cup), Honey(about 1/4 cup) cumin and garlic powder. Mix enough to coat the dough as you would with red sauce, and mix until you get the taste you like. Spread over dough. Add onion, chicken, cheese and sprinkle with parsley and red pepper. Cook for about 10 -15 minutes or until done, my over just cooks really fast:-)
