Buffalo Chicken Quesadillas and Seasoned Black Beans

SONY DSCTonight I made the best quesadillas ever! I wanted something simple because to be honest this week has been busy and I’m really tired on top of having a pinched nerve or something. Neck and back pain are no fun so I wanted easy, quick and good! I’m a little out of sorts this week and really off schedule, I think part of it is the catch up from the kids being on vacation last week, Easter business and yesterday my son had a minor surgery and I wonder why I’m tired! I’m sure many many parents can relate! These buffalo chicken quesadillas I made are a must try, I for sure know I will be making them again very soon, I could hear my husband purring across the table, I swear he purrs when he truly enjoys a meal! haha. Here is the recipe!

 

1 package (8 pk) of multi grain fajita size tortillas

5 chicken tenders

Hot Sauce (I love Franks, but any will work!)

Blue Cheese crumbles

1 package of Cabot Habanero Cheddar cheese

2 onions

1 celery stalk, diced

oil for making the tortillas and sauteing onions

 

Directions:

First you want to marinate the chicken in hot sauce for about an hour or more before cooking. Preheat over to 350 and bake the chicken until done. When it’s done, shred it and add some more hot sauce coating well and then put contents into a large bowl. Now slice the onions and dice the celery and saute in an oiled frying pan until browned. When done, add to the chicken mix in the large bowl. Shred the cheese, using most of the block of cheese, add about half a cup of blue cheese crumbles and mix together well. Heat oil on a frying pan, I used my flat skillet that I make pancakes on. Place a tortilla on the pan, add half the mixture (the tortilla will be full!) then top with another tortilla. Cook for about 2-3 minutes then flip and do the same on the other side. Put on a place, cut into 4 and serve! I made 2 of them tonight, we did have some left over mixture that we saved, or you could make another quesadilla.

I also had seasoned black beans, it sounds like I did so much work but really, I opened a can of publix seasoned black beans because they are always so yummy and heated them of medium heat! That was so easy! You really must try these quesadillas! Enjoy!
