Today I made my annual St. Patty’s Day meal, Corned Beef and Cabbage! I love this meal, I’m the only one in my family who loves it though! My husband likes it enough as long as he doesn’t have to eat the cabbage and is a great sport about eating it with me! I crock pot mine because it’s just so easy and so tasty and it was perfect today as we were going off to church, I put my meal in the crock pot before heading out and let it cook all day and dinner was done! I did also make a side of green mashed potatoes for the kids, they love to have a green dinner once a year! I bet there are a million blog posts on corned beef and cabbage every St. Pattys day, so here’s to a million and one:-)
1 Corned Beef Brisket with seasoning pack (I used 2.5lb)
1 bag of baby carrots
5 medium potatos cut into chunks
1 head of cabbage cut onto wedges
water (will explain below)
Place your Corned Beef Brisket into your Crock Pot. Add the seasoning packet then pour water into the crock pot until it almost covers the brisket. Add all the vegetables and cover. Cook on low heat for 8-9 hours. Serve and enjoy. Easy huh!
