Peanut Butter and Jelly Cake

011I had another great dessert idea today and had to go with it! I wanted something with peanut butter in it because I’m peanut butter obsessed as is the rest of my family fortunately, and I thought about a yellow cake with Strawberry Jam in the center and peanut butter frosting. It turned out better than I thought and everyone in my house loved it! I can’t not share so here is the recipe

Cake Ingredients:

2 1/4  cups all purpose flour

2 tsp baking powder

1/4 tsp salt

1 1/2 sticks of unsalted butter

1 1/2 cups granulated sugar

2 tsp vanilla extract

4 lg. eggs

1 cup milk

1 jar of strawberry jam for the center

 

In a large bowl beat butter, sugar, baking powder & vanilla on high for about 3 minutes or until fluffy. Add eggs one at a time beating well after each one. On low speed beat in flour in 3 steps, alternating with milk just until blended. Pour into 2 round cake pans equally. Bake at 350 degrees for 30-35 minutes. Let partially cool then carefully remove them from the pan and leave on wire racks until completely cool. Once they are cool, spread the jar of jam on top of one of the cakes and when it’s spread evenly top with the other half of the cake.

 

Frosting Ingredients:

3 3/4 cups confectioners sugar

1/2 cup of butter

5 tbsp milk

1 tsp vanilla extract

1/2 cup creamy peanut butter

3/4 bag of semi-sweet chocolate chips for decorating edges

 

In a large mixing bowl combine the sugar, butter, 4 tbsp milk and vanilla together until smooth on low speed. Add the peanut butter and remaining tbsp of milk and mix well. Frost cake. After frosted arrange chocolate chips around edges as desired and on top. Cut and serve! Enjoy!009 011 015 016

  2. This is so awesome! I’m not fond of PBJ but my kids LOVE it! I’m sure they would love this cake too. As soon as I get the ingredients together, I’m making it for them. Thanks for sharing this wonderful recipe and I’ll let you know how it turns out!

    • Thanks for reblogging my PB&J cake! It was soooo delicious! I get cravings and just start creating! If your not a PB&J fan you are right, it won’t be your thing, but the kids will love it if they do! I can’t wait to hear how yours turns out! In my house we are all PB fanatics so that poor cake didn’t stand a chance for survival!
