It’s so nice to be back to an almost normal routine! We traveled to VT/NH for Christmas, it was fun but there is really no place like home! Funny we think of Northern AL as home since we are just about to mark our 1 year anniversary here, but we LOVE it!! I should blog about our trip, our families really could be a replica of the Griswalds, but I will do that another time but I will share one funny moment, it’s funny now because the outcome was good, at the time it was a little scary!
My kids love sleeping on my parents living room floor, they have always slept there. We noticed that my moms Christmas tree appeared to be slightly leaning one day so we said we would mention it to dad when he got home. Well…. in the midst of the chaos of the holidays and tending to a family friend who is terminally sick, we FORGOT! At 4am we heard crash. I thought I was dreaming. Then I thought someone was breaking in, the tree situation didn’t dawn on me until I heard my mother screaming “OH MY GOSH, MY TREE!!” I flew downstairs to see a tree lying across the living room across both my kids, my daughter was buried in it! Broken glass everywhere!!!! My sons face and hair was just glistening with little chards of that fine Christmas ornament glass. Short of the long is the kids were absolutely fine, not even a cut somehow, we were so thankful and lucky. The bad news is mom lost a lot of ornaments, some that she has had since my brother and I were very little, but it could have been much worse. We will never forget that! This is our 2nd Christmas tree disaster at my moms since my kids were born. I think many of us have had them!
Since being home the past few days, I am deciding I must get back to my better eating habits, holy moley the holidays can sure make those pants tight! Yesterday I made a tasty little sandwich and enjoyed it with a cup of Lipton soup. If you are looking for a simple, healthy lunch or even dinner idea you should try this, it was very yummy:-)
Ingredients:
1 slice of Whole Wheat Bread
1 tsp lite mayo (I think Hellmans rocks:-))
1 small tomato sliced
about 6 banana peppers
a few thin slices of onion
sharp Cheddar cheese (about 1/4 cup, I didn’t measure, surprise surprise;-)
parsley
Line a broiling pan with foil. Place bread on foil. Spread the lite mayo on the bread, then place the onion slices, then tomato slices on it. Place the banan peppers on top of the tomatos, top with the cheddar cheese and sprinkle on some parsley and crushed red pepper to taste. Broil on low until the cheese looks melted (about 5 min.) and done, simple!

I LOVE a good sandwich too!! I used to make monster ones growing up!! My mom still picks on my dagwood sandwiches,lol. Thanks momto2monkeys, it was a relief the kiddos were ok, we will never forget that!!
