So last night my kids and I went across town to leave my friend off at our friends house to hang out with her son. I was only going to stay a minute, yeah right! So when I left at 5:30 I felt really bad that I had no dinner going for my poor husband who has been working crazy overtime, not that he will mind, but I do:-) I had chicken thawed out in the fridge but didn’t feel like traditional chicken of any sorts and I was really craving pasta (when am I not!) So I put my creative side to work and made this super delicious as well as super easy recipe, it was awesome!
You will need:
about 3 boneless chicken breast
1 smaller bag of frozen spinach
1 smaller bag of frozen peas and carrots
1 onion diced
1 box of penne pasta
crushed red pepper
dried parsley
black pepper
parmesan cheese (to top with after serving
light italian dressing
2 big cloves of garlic
1 tbsp of butter (for sauteing onions)
cinnamon
I put my chicken in a casserole dish and covered it with light italian dressing and baked it at 350 degrees for about a half hour. It may still look a little pink, don’t fret, you are going to saute it with the veggies later!
While the chicken is cooking I start boiling the pasta water and continue cooking the pasta until it done. Drain and set aside, it won’t be that far behind the the other part of the meal.
Saute the diced onion in the butter until it starts getting transparent, add the frozen spinach, frozen peas & carrots. Add some crushed red pepper (a staple in many of my recipes, we love spicy food) some ground black pepper, some parsley and a dash of cinnamon. The cinnamon may sound weird but it adds a nice touch, trust me! When this mixture is almost done and the chicken is ready, dice up the chicken into desired size chunks and add to the veggie mixture. When almost done add the 2 cloves of crushed garlic. Let cook until the chicken looks completely done. Put the pasta into a big serving bowl, add the veggie mixture, add some light italian dressing (about 1/4 cup), stir the mixture together(lightly so you don’t crush the pasta) top with parmesan cheese, sprinkle with a little more red pepper and parsley and it’s done! It looks so pretty in the bowl! One of these days I will figure out how to upload my photos of my food to this new blog:-)
