Whole Wheat Apple Cinnamon Pancakes (Clean)

I’m trying to really dedicate myself to a clean eating lifestyle. Now this is not easy for sugar addicts like my husband and myself! However, I have found that there are so many wonderful and natural sugar alternatives that in moderation are such better choices for us. I’m hoping this year to bring a lot of healthy and clean recipes to you all. I will still be making some treats too so don’t worry! I’m looking forward to creating some yummy treats that are “healthier” and I’m sure I will fall off the bandwagon on occasion and just make a really bad and unhealthy treat or two also! By sharing these recipes I’m also holding my husband and I accountable for what we are eating! Clean eating really isn’t a diet, it’s a lifestyle and I want to help you to be able to live that lifestyle too so that we can all be healthy and live long lives with fewer health issues.

I have many recipes and snacks to share with you all but I’m just going to go ahead and start with this recipe I made up for breakfast this morning. I woke up with no plan and whipped these together and they were so tasty! These pancakes are a denser almost dessert like texture and had so much fun flavor! And the best part of clean eating is that pure all natural maple syrup is on the list of OK and approved natural sweeteners! (in moderation of course!) The best part about these pancakes is they have so much sweetness to them between the coconut palm sugar and apples that you really only need an ounce or 2 of syrup added on top if any at all!  Here is my recipe!

Ingredients:

3 tbsp Organic coconut oil (this is the oil for the pans, start with one tbsp, add as needed)

2 cups whole wheat flour

3 tbsp coconut palm sugar

1/4 tsp salt

1.5 tbsp baking powder

3/4 cup quick oats

2 eggs, beaten

2.5 cups unsweetened coconut milk

2 tbsp ground flax seed

2 medium apples, peeled and diced pretty small

1.5 tbsp cinnamon

Directions:

Heat your skillet on medium heat with the coconut oil it. I used my cast iron so if you used cast iron you will want to monitor the heat well once you start cooking the pancakes so you don’t burn them. You may need to turn it down to medium low after a bit but not until you start the cooking process.SONY DSC

In a large bowl preferably with a spout mix together all the ingredients starting with all dry then adding the wet and apples last. With a large spatula mix together well. This mixture will be fairly thick, definitely thicker than traditional pancake mixture. IMG_0915SONY DSCPour your pancakes mix onto your skillet, I make 4 at a time. SONY DSCCook a few minutes on this side and when the edges start browning nice flip and cook on the other side, cooking through. Continue until all of your batter is used then top with a small amount of Real Maple Syrup and enjoy them! I usually put my pancakes on a baking dish/pan as they come off the skillet and put them in a preheated oven (170 degrees, just enough to warm) so that the pancakes are all warm when it’s time to serve the family so everyone can eat together:-)

  1. Fantastic! Can’t wait to see more healthy posts and not so healthy ones! I guess we’re all trying to strike a balance.
    I’d love to try these pancakes with coconut flour. If I do I’ll let you know!

  2. I’m trying to eat cleaner as well, but it is hard for me to be consistent with it. These pancakes look delicious! I usually try to not add too much syrup to my pancakes, so it’s great how these are already sweet from the coconut sugar and apples. Thanks for sharing!
