Today is a beautiful sunny but chilly fall day! A good day to stay warm inside! My friend, who lives next door, and I like to take a walk most mornings mornings and due to sick kids and just stuff going on we have not been able to walk together this week until today! I almost chickened out. I did my Jillian Michaels dvd that I do everyday (well, I don’t do the same one everyday, I have most hers so I mix it up!) then decided that the treadmill was not what I wanted to do today so we braved a cold and very windy walk! It was fun though, I love getting our chat time in and the cold made us walk even faster than we normally do! To think, if I didn’t love to cook and eat so much I could really be more fit with the amount I workout everyday! I can’t imagine not being in the kitchen on a regular basis, it makes me happy and it’s so much fun to create:-) When we got home I made myself a delicious caramel latte and am enjoying my cozy and sunny office and the company of my pups! I’ve been trying to decide which recipe to post today, I have so many I want to get up on the blog and decided to go with a simple and delicious sandwich post. This sandwich was every bit as good to devour as it is to look at! If you want this on homemade bread than the recipe I use is on my blog, just search for homemade white bread. It’s totally worth taking the time to plan ahead and bake some fresh bread for this recipe, plus you will have the added perk of making your house smell scrumptious! However, if you don’t have time to make your own, pick up a nice loaf of fresh bread at your bakery. To make this sandwich, this is what you need to have on hand and what you need to do!
Ingredients:
Bread (a homemade or bakery loaf)
3/4 lb rare and fairly thin sliced roast beef
fresh Mozzarella block from the specialty cheese section (slice it thicker, about 3 or 4 thicker slices per sandwich)
2 cups fresh spinach, washed and drained
2 medium onions sliced thick
1 large tomato, sliced
2 green onions sliced
1 garlic clove, minced
ground black pepper to taste
1 tbsp olive oil (to saute the spinach and onion)
Directions:
In a fry pan saute your onions until caramelized. When they are caramelized turn the heat off but leave the pan on the the burner and add your spinach and garlic and mix well. While prepping the sandwichs, stir the spinach and onions a couple times until the spinach has become darker and soft.
Now slice your bread into thick slices. Butter each slice on one side. On the unbuttered side add about 1-2 tsp of horseradish sauce and spread evenly on the bread. Now layer with roast beef then add 2 slices of tomato, some green onion, the spinach mixture, then the slices of mozzarella. Add some ground black pepper to taste. Top with the other slice of bread now. Your sandwich will be tall!
Carefully transfer these onto a fry pan. Cook on medium to medium low heat, flipping in between so they brown evenly on each side and the cheese melts. Flipping these takes a talent and trust me, some stuff will fall out, just put it back on! When done, slice and enjoy! This is one of our favorites!
