I have to start with saying a great big Happy Birthday to my Husband Bill! Thirty Five has never looked so good;-)
It’s definitely fall, I am craving soups! I love soup and could eat it year round, and do actually! Anyone else agree that it can never be too hot for soup? This soup is creamy and thick and full of nice herb flavors, while the bacon adds a nice smokey and slightly crispy touch. It was a perfect light meal for us after a nice fall evening stroll. I’m going to make this post short and to the point because I’m in the midst of making my husbands birthday cake and then need to move onto the pot pies that he requested as our dinner. Future posts to be written!
Ingredients:
7 medium potatoes
1 medium onion, diced fairly small
2 cups low sodium chicken broth
3 cups skim milk
1 tbsp olive oil
1/2 lb low sodium bacon, cooked to taste, broken into chunks (I like my bacon crispy and the crunch added a nice touch)
1 tsp garlic powder
1 tsp rosemary
1 tsp oregano
1 tsp crushed red pepper
ground black pepper to taste
1/2 cup shredded cheddar cheese
Directions:
Peel your potatoes and cut into small chunks. Place them in a large pot full of water and boil until they are softened. At the same time you make the potatoes, make your bacon and set aside. Drain potatoes and set aside. In another large pan, saute your onion in your olive oil. When browned add the chicken broth, milk, potatoes and spices.
Add the shredded cheddar and heat this mixture for about 20 minutes, stirring often. When it’s done, remove from heat. Get out your blender and add 1/3 of the mixture to your blender and blend for about 30 seconds or until all the lumps are removed. Pour into a large serving bowl. Do this 2 more times until all of your soup is blended smooth. And try not to do what I did, my last batch in the blender exploded everywhere:-)
When your soup is all blended and in your serving bowl, add 3/4 of your crumbled bacon and mix in.Place desired amount into bowls to serve. Top each bowl with the remaining bacon, some cheddar and some black pepper to taste. Enjoy:-)
