Pumpkin Oatmeal Bake

SONY DSCI’ve been seeing a lot of oatmeal posts lately. Overnight oats, steel cut oats this and that, oatmeal bakes so I thought “am I missing something?!” One of my Facebook friends had posted a great looking pumpkin oatmeal bake and while I didn’t read what she did, a couple days later I thought I would make up a recipe and give it a shot. It was really really tasty! My kids even liked it! I notice I’ve been saying that a little more lately, I think they are coming around! I’m not going to ramble much in this post like I usually do only because of the “tissue to nose” issue I’m having this weekend, it seems to be worsening this afternoon so I’m going straight to the recipe!

Ingredients:

3 cups of Old Fashioned Oats, cooked as suggested on box

1 can pumpkin

2 tsp cinnamon

1 tsp nutmeg

1/2 tsp ground cloves

1/4 cup honey

1/4 cup milk

1 cup craisins

chocolate chips to top (however much you wish!)

Directions:

Make the oatmeal as suggested on box. When it is done, Remove the pan from heat and add the milk, honey and pumpkin. Stir well. Now add the spices and mix well again. Add the craisins, again mixing well. Pour into a baking dish (I used my pretty cranberry deep pie dish) Top with chocolate chips and bake at 325 degrees for about 20 minutes. Removed and serve! This is simple and delicious!
