I think it’s safe to say I’m completely pumpkin obsessed. As my cousin told me on the Face Book the other day, this has gone too far and it’s time for some Pumpkin AA immediately! She makes me laugh, she also actually directed that comment to my aunt Bonnie as well to whom I give the credit to for my genetic inheritance for the love of pumpkin:-) Seriously, this pumpkin obsession is quite crazy and I see no end in sight, my mind is still cranking away with pumpkin concoctions! Today I found this little pumpkin treat while out with a friend. Thank you Target🙂
The other thing I need AA for is my thrifting habit:-) No, it’s actually a good habit:-) My friend and I had a thrifting and lunch out day and yes, we dove straight into this!
Was it worth it you ask?! Why yes it was! Just the 5 pair of American Eagle jeans I got for my son would have made it worth it let alone all the other goodies! All you can fit in a bag for $5! Ok so back to my other addiction, food!
I have a Pumpkin Bar recipe on my blog, it’s Pumpkin Bars with Cream cheese frosting. If you haven’t looked these up and made them than you just don’t understand what you are missing and your life can never be complete until you taste them! So go look them up and try them, you won’t regret it! I decided to mix up that recipe recently and came up with this great recipe! The pumpkin and chocolate mixed together was tasty and decadent! Here is what you need to know:-)
Ingredients: (for Bars)
2 cups flour
1 cup sugar
1 can Pumpkin
2.5 tsp pumpkin pie spice
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 cup buttermilk
1/2 cup vegetable oil
3 eggs
3/4 cups baking cocoa
Directions:
In a large mixing bowl combine all ingredients, there no method to this madness, just put it all in the bowl and mix! Use your electric mixer on medium speed until the mixture is mixed evenly and everything is combined well! Pour into a greased 11 x 13 baking dish and bake at 350 degrees for about 30-40 minutes, or until your tested inserted comes out clean. Remove from heat and fully cool before frosting!
Ingredients for frosting:
3 cups confectioners sugar
1 tsp vanilla
3 tbsp buttermilk
1 stick butter
3 oz cream cheese
1/2 tsp ground ginger
1 tbsp ground cinnamon
Make sure you take your butter out ahead of time to soften it. Combine all ingredients in a medium size mixing bowl and mix until smooth. Frost, then cut into bars and serve!
These bars are incredibly moist, then again anything I make with pumpkin turns out moist, yum! The addition of buttermilk is also a treat! The frosting has a wonderful fall flavor with the cinnamon ginger combination, they compliment each other as well as the pumpkin in this recipe perfectly:-) Give them a try this pumpkin season!
