I have time for one more post today which is good, because I have so many recipes I want to get up before I forget about them and they get lost in my mass collection of food photos! The clothes I want to wear are not dry yet so that is my excuse to keep blogging:-) I want to share this pie because it is just so tasty, you get the different kinds of sweetness from the pear and apple, then the cream cheese flavor kicks in and you get then you get the gritty sweet brown sugar from the crumble on top, yeah, you just have to make this! I found this recipe online, it was a Kraft recipe and I adapted it a little as I almost always do! This is the original Kraft recipe which sounds great but I didn’t have Nilla wafers on hand. http://www.kraftrecipes.com/recipes/apple-pear-crumble-pie-107291.aspx.
I didn’t change it a whole lot but here is the way I made it:-)
Crumb Topping Ingredients:
1 cup of packed brown sugar
1 cup all purpose flour
1/4 cup of butter, sliced
Pie Ingredients
1 ready to use refrigerated Pie Crust
4 oz cream cheese, softened (I used 1/3 less fat cream cheese)
2 large apples, peeled and sliced
3 pears, peeled and sliced
1/3 cup granulated sugar
1/4 cup flour
1/2 tsp ground cinnamon
Lite Cool Whip for topping
Heat over to 375 degrees. In a mixing bowl mix together the brown sugar, flour and butter until well mixed and set aside, this is your crumb topping.
Place pie crust in a 9″ pie plate that has been coated with cooking oil. Spread the cream cheese over the crust until smooth and even. Sprinkle a thin layer of the crumb topping over the cream cheese mixture. In a large mixing bowl mix together the apple and pear slices, sugar, flour and cinnamon and toss/mix until well coated. Place the fruit mix in the pie crust on top of the cream cheese/crumble. Top with remaining pie crust, fold edges and cut a few slits in the pie crust. Top with the remaining crumb mixture. Bake for about 30 minutes until browned, you may have to cover loosely with foil after the first 20-25 minutes to avoid over browning. Slice and top with cool whip and enjoy!
As a side note, I make the ugliest pies on the face of the earth! I have yet to perfect or even come close to perfecting the art of making a pretty pie! However, on a good note, they always taste awesome, so to me that is all that really matters, it’s all about the taste!
