Apple Cheddar Pie

I told myself I would have our new apartment totally organized by tonight…well, that is not looking like it’s going to happen! I spent the morning working out, shipping packages for my ebay business, taking back returns that didn’t work in our apartment,  and grocery shopping. Now I’m beat and feeling totally overwhelmed with the things I still haven’t accomplished. So…..since I’m having a moment of complete lack of self motivation I’m going to sit here and do what I love! Blog about food and sip coffee, not just any coffee but pumpkin spice with pumpkin spice creamer!

Lets talk Apple Cheddar Pie! Ummm, ummm good! Yes, I live near Huntsville AL, but this New England style pie is one I had to make and share here with friends, I am after all a New Englander. While I love embracing the traditions and styles and tastes of the South, sometimes I just have to keep my roots as well! I do believe that most people who serve apple pie with cheddar add a slice of warm cheddar cheese to the top of the slice. I do my Apple Cheddar Pie differently. I put the whole darn shabang of cheese right in the apple mix and it adds just a unique, delicate touch of bitter creaminess to the sweet and tart apple mix. Yum!

Before I post this just know…Baking is not my Forte! I like to bake and create and experiment and boy do I love eating any and all baked goods, but my baking doesn’t always come out pretty like many other peeps do. It’s delicious, but not as pleasing to the eye as many peoples! Cooking is my strong point! But hey, we can’t be great at everything, we just have to keep practicing until we perfect the issues we struggle with! Here is my apple cheddar pie recipe!

Ingredients:

1 pre-made refridgerated pie crust (such as Pillsbury or you can make your own from scratch)

6 apples (I used 4 honey crisp & 2 granny smith for a sweet/tart mixture)

3/4 cups sugar

3 tbsp of all purpose flour

3/4 tsp of ground cinnamon

1/2 tsp ground nutmeg

1 cup shredded 2% sharp cheddar cheese

4 slices of butter, about 1/4″ thick each (for crust topping

Preheat the oven to 350 degrees. Take pie crust out so it can sit 15-20 minutes before placing in pie dish. Peel and slice apples and add cheese to them. In a large bowl mix sugar, flour, cinnamon & nutmeg. Add apples and coat in mixture evenly. Once you have lined a pie dish with bottom crust, add apple contents. Cover with upper crust, pinch edges sealing well and crimp edges using fingers. Cut slices (I do 4) in center of pie so it can breath. Place butter slices on top pie crust and sprinkle with 1 tsp of sugar. Place pie pan on a baking tray to catch drippings and bake about 45 minutes or until it is nicely browned. You may have to cover crust edges in foil after about 20 minutes to avoid burning, depends on oven! Serve plain or with ice cream! We served it with vanilla frozen yogurt! My pictures sadly don’t do justice for this pie, it is so much better tasting than these pictures portray, I was rushing!
